We started school much later than most of our friends so I have had a few extra weeks to soak up Summer! But back to school is finally here and we have spent the past week preparing for a great start!
I haven’t been consistent about meal planning over the Summer but back to school is the perfect time to get back on schedule. I thought I would share our meal plan this week as I know many of you are also planning ahead and looking for inspiration.
Breakfast: Mickey Mouse Pancakes
I always do something fun for the first day of school breakfast and this year Gabriel requested Mickey Mouse Pancakes. Last year I made “teddy bear toast” and I thought it was so cute and easy!
After School Snack + Family Home Evening: Apple Dump Cake + Ice Cream
I love to have a special after school snack prepared for Gabriel when he gets home. Apple dump cake is sooo easy and it smells so good when you walk in the door. I have great memories of all the yummy smells coming from the kitchen as a child and I have always wanted to make this a priority in my home.
This week I am also starting a study of a the alphabet with Connor and each week will be a new letter. I am also going to use the letter to choose the theme of our weekly Family Home Evening lesson. Every Monday night we have a family night called “Family Home Evening”. We keep it pretty simple with a short lesson, a few scriptures and always a treat. I don’t think we need two treats in one day so we will be eating this for snack and for FHE. Since the letter this week is A, our theme for FHE is going to be Attitude so we will be talking about how to have a positive attitude especially with back to school.
Dinner: Pulled Pork Potatoes + Mac n Cheese.
The first day of school is always a busy day and I knew I didn’t want to have to spend much time in the kitchen so one of my go to meals is stuffed baked potatoes. I asked Gabriel what he wanted for his back to school dinner and he requested Mac n Cheese so that will be our side dish. I put the pulled pork in the crockpot, the potatoes in the oven and have additional toppings available. Annie’s has an organic mac n cheese made with grass fed cheese that I prefer to serve over the traditional kraft brand.
Breakfast: Blueberry Muffins
I use my maximized living cook book all the time. This is the cook book I followed for Clayton’s cancer diet and we continue to use it daily. These blue berry muffins are made with fresh blueberries and almond flour so they are healthy and delicious! Add a little grass fed butter and it almost tastes like dessert.
I pretty much make Tacos every Tuesday. Its one less thing I have to think about and everyone in my family loves tacos. Sometimes we use tortillas and some times we just use lettuce for a Keto version. I make my own taco seasoning from the maximized living cook book and pair with grass fed beef or organic chicken.
Breakfast: Eggs + Bacon
Dinner: Roast Beef Sandwiches
I don’t stray from my easy go to meals very often but here and there I try new things and will add them into rotation if everyone likes them. This is going to be a new one I am trying this week. I saw them while scrolling pinterest and they just sounded good and different from our normal. I will let you know how they turned out.
Breakfast: Avocado Toast
I fell in love with Avocado toast while traveling. I had never considered making it at home before but I was craving it one day and ya’ll its so good and so easy. I buy the prepackaged guacamole and then add tomatoes, onions and sprinkle “everything but the bagel” from Trader Joes on top of toasted Ezekiel bread. Try it. Your welcome.
Dinner: Greek Salad + Steak
I know steak can be expensive but I love a good quality meat because its simple and delicious. I add a salad with cucumbers, tomatoes, onions and a sprinkle of feta topped with olive oil and boom, dinner is done!
Breakfast: Waffles + Fruit
I buy the pre packaged organic waffles from Van’s. They probably still aren’t the healthiest but Gabriel looooves waffles and I figure we can’t be perfect healthy eaters all the time. I add some fruit so it’s got a healthy side.
You know how I make tacos every Tuesday because its easy and I don’t have to think about it? Well, we recently started eating Pizza every Friday. Most days I try to make my own so it’s a healthy option but some days we just order out. I think this is a fun tradition that the kids love and it makes one less thing I have to think about going into the weekend. My favorite homemade pizza recipe is from Maximized Living. The dough is just 2 cups of almond flour, 2 eggs, and 1 tbsp of of grapeseed oil. Then add all the toppings!
I don’t typically plan any meals for Saturday. Between sports, family activities and work we are typically out and about on Saturday so if we don’t eat out then we eat any leftovers.
Our church service doesn’t start until 12;30 on Sundays so we love to have slow mornings. My husband usually makes a big breakfast that also suffices for lunch and then when get home around 4:00 we typically grab a snack and then I make dinner. I have been trying to make meals on Sunday that are comfort foods. I love the idea that everyone looks forward to a great home cooked meal on Sundays. This week we are doing spaghetti, salad + rolls. We don’t have rolls often so this will be a special treat for the boys!
You may have noticed I didn’t plan ahead for lunch. I have a place on my weekly meal planning list (click link for free download) for lunch but most of the time we eat leftovers or we graze. I always have fruits, veggies, nuts, cheeses, eggs, and meats in the fridge. My favorite lunch is just a mix and match plate of these. They are toddler friendly too so its easy to put out a plate and eat together.
Well, that’s it. I typically finalize my weekly meal plan over the weekend and then I have Amazon Fresh deliver groceries on Monday morning. I spend a few hours meal prepping on Monday and then we are ready for the week!
