52 Meals: Week Three

Yesterday I wrote how I have been in a bit of a “funk” since the beginning of the new year.

But one of the things that has helped me keep moving forward is service. It has only been three weeks, but my heart is so full because of my 52 Meals project.

This week, one of my best friends had been sick all week and I knew she would be on my list to serve. She is currently on the keto meal plan so I made one of my favorite keto meals.

This Chicken Bacon Ceasar Casserole is yummy whether you are eating keto or not. It feels like comfort food but is compliant with keto. If you aren’t following a keto plan, add some noodles to this dish for a twist on traditional pasta. Your tastebuds will thank you!!

It says 10 minute prep time but it took me much longer. You do have to cook the chicken and the bacon before you put the casserole in the oven.

I was running a little short on time so I bought pre cut cubed chicken from amazon which saved me some time in cleaning and cutting up the chicken. And to save time and cleanup, I cooked the bacon in the oven. If you have never done this before, its amazing. Quick clean up, no grease splatters and the bacon is cooked evenly all the way through!

I packed the casserole in these disposable pans and added a fresh salad that I packed in these individual containers. I love both of these package options and will be using them a lot for my “52 meals” project. There are three different sizes for these containers, they travel well and are great for delivering and storing food. I also added some chocolate chip cookies for her kiddos!

I am praying each week for who I should be serving and have been provided clear direction on who I should be serving the next few weeks. I love listening to my Heavenly Father and hearing your names during this journey.
